Nora Pouillon Nora Pouillon, chef/owner of two highly acclaimed Washington, DC, restaurants, Restaurant Nora and Asia Nora, is a big believer in teaching people from a young age how to prepare healthy food safely.

As National Food Safety Education Month chairperson, Pouillon will help communicate to the public that the restaurant and foodservice industry is committed to serving safe food. Pouillon will not only help consumers understand the care restaurant and foodservice professionals take to serve food: She will also help build public understanding that food safety is a critical part of food preparation in every kitchen, including at home.

Pouillon is the author of Cooking With Nora,a cookbook featuring organic menus created especially for the home kitchen. She was named 1997 Chef of the Year by the International Association of Culinary Professionals, and was the first woman named U.S. Chef of the Year by the American Tasting Institute. Her restaurants have been praised by The Washington Post, Wall Street Journal, USA Today, Gourmet, Vogue, and other leading publications.

She has worked with the U.S. Department of Agriculture to enhance its Public School Lunch Program and has helped Fresh Fields, the chain of natural food markets, develop a collection of high-flavor, low-fat dishes for its prepared food counter.
